CO-Treated Meat

A recent letter from Members of Congress sent to all 50 State Department of Health administrators, urged the officials to take action to prevent the sale of fresh meat packaged with carbon monoxide in the light of inaction at the federal level. At a minimum, the officials were asked to ensure that consumers in their states are aware of the use of carbon monoxide on fresh meat and that consumer’s can no longer use color as a reliable indicator of freshness. The letter was sent to all 50 officials on Friday, June 9, 2006.
